9.) La Cocina de Colacho
They've come a long way, have husband-and-wife team Colacho the chef and waitress Anabel. The latter now serves 14 tables but she started off as a dishwasher aged eight when she used to have to stand on a Coca-Cola crate to reach the taps of the sink. These days she's bringing out the inventive gastronomic delights prepared by Colacho and his team in the open kitchen.

There are even less staff at La Cabaña Restaurante, a 25-cover restaurant which opened in October 2002.
